This is a recipe from Sandy McN’s recipe book, it looks like the ultimate comfort food to me!
1-2 Chicken breasts cooked and chopped into pieces
1 can of cream of chicken soup
4 oz. Sour cream
8 oz. Shredded sharp cheddar cheese
2-3 C. uncooked wide noodles
1/4 C. butter, melted
1 ½ C. Rice crispy cereal or ritz crackers crushed
Cook the noodles per their package directions. Drain.
In a large bowl mix the soup, sour cream, cheese and chopped chicken. Add the cooked noodles. Pour into a greased 11 x 7 baking dish. Stir the cereal/cracker crumbs into the melted butter. Top the casserole with the crumbs. Bake at 350° for 35 minutes.
