This is the ONLY fish my husband will eat. And my boys love it. If you’re looking for new, healthy way to make fish, I encourage you to give it a try. It’s from Betty Crocker. The breading makes a large amount. If you’re only using it for 4 fish, you may want to cut it in half.
3 T butter or margarine
2/3 c Bisquick
1/4 c yellow corn meal
1 t chili powder
1 1/4 t salt
1 pound tilapia
1 egg, beaten
1 1/2 c thick-and-chunky salsa–we love it with a fruit salsa like mango or peach
-
Heat oven to 425. Melt butter in a rectangular pan (such as 9×13) in the oven.
-
Mix the Bisquick, cornmeal, chili power and salt. Dip fish into egg, then coat with breading. Place in pan.
-
Bake uncovered for 10 minutes. Turn fish. Bake 15 minutes longer or until fish flakes easily with fork. Serve with salsa. It goes very well with couscous.
