What’s for Dinner? Crispy Baked Fish with Salsa April 19, 2008

This is the ONLY fish my husband will eat. And my boys love it. If you’re looking for new, healthy way to make fish, I encourage you to give it a try. It’s from Betty Crocker. The breading makes a large amount. If you’re only using it for 4 fish, you may want to cut it in half.

3 T butter or margarine
2/3 c Bisquick
1/4 c yellow corn meal
1 t chili powder
1 1/4 t salt
1 pound tilapia
1 egg, beaten
1 1/2 c thick-and-chunky salsa–we love it with a fruit salsa like mango or peach

  1. Heat oven to 425. Melt butter in a rectangular pan (such as 9×13) in the oven.
  2. Mix the Bisquick, cornmeal, chili power and salt. Dip fish into egg, then coat with breading. Place in pan.
  3. Bake uncovered for 10 minutes. Turn fish. Bake 15 minutes longer or until fish flakes easily with fork. Serve with salsa. It goes very well with couscous.
